Fish Fillet Baked with Potatoes & Garlic

INGREDIENTS

1-1/2 pounds boiling potatoes, peeled and sliced very thin
1/2 cup extra virgin olive oil
1 tablespoon chopped garlic
1/4 cup chopped parsley
Salt and pepper
2 pounds firm fish fillets (turbot, snapper, or bluefish)

DIRECTIONS

1. Preheat oven to 450°.

2. Place potatoes into Pyrex, add half the oil, half the garlic, half the parsley, salt and pepper. Spread potatoes evenly over bottom of Pyrex.

3. Put in oven and roast 12 to 15 minutes. When they are halfway cooked, take them out and place fish fillets on top.

4. Mix together remaining oil, garlic and parsley. Pour over fish. Sprinkle with salt and pepper. Return to oven.

5. Bake 15 to 18 minutes, basting with juices after 10 minutes.
