Garden Scrod

INGREDIENTS

2 big red tomatoes
Lemon juice
1/2 cup Jason bread crumbs
1/4 cup olive oil
1/4 cup shredded carrots
Paprika for color
White pepper
Salt
Scrod

DIRECTIONS

1. Use a Pyrex dish or ovenware and spray generously with Pam.

2. Slice tomatoes thinly and put them on the border of the Pyrex.

3. Take the fish and put it in the center where there is no tomato.

4. Season tomato and fish with salt.

5. Mix carrots, bread crumbs, olive oil, white pepper and paprika. Pour it only on top of the fish.

6. By the capful, pour lemon juice on tomatoes only.

7. Bake uncovered for 40 minutes at 350°.
