Honey Mustard Salmon

INGREDIENTS

Fish:
1/2 salmon fish, filleted
2 garlic cloves, finely, sliced

Sauce:
2 tablespoons Dijon mustard
1 tablespoon honey flavored mustard
4 tablespoons honey
2 tablespoons Cary Randalls
Honey Mustard Dressing
2 leeks, thinly sliced on the round – white and pale green part only. Thoroughly soaked and cleaned
Oil for frying

DIRECTIONS

1. Combine sauce ingredients and whisk together.

2. Take salmon and set it in an ovenproof roaster that has been sprayed.

3. Cut slits into salmon every 2 inches and insert sliced garlic.

4. Pour sauce mixture over salmon. The longer it marinates the better! Reserve some mixture for later.

5. When ready, place in oven at 375° covered for 20 minutes. In the meantime, lightly fry leeks until golden. Then, place leeks on top of salmon and uncover. Continue to cook for 10 minutes. Then, broil for 5-7 minutes more until salmon has a caramelized color on top. Heat remaining sauce on stove and serve with salmon either on top or on the side.
