Kibbe Cherries

INGREDIENTS

Meat:
Chopped meat
Matzo meal
Salt
Pepper
Allspice
Cumin
Water
Pinenuts

Sauce:
Onion, chopped fine, sautéed in oil
2 cans sweet cherries, strain,reserve juice and cherries
1 can sour cherries, strain, reserve juice, discard cherries
1 can cranberry sauce
Sugar
Lemon
Tamarind
Dash sour salt

DIRECTIONS

Meat:
1. Shape into round balls placing one pine nut in center and rolling chop meat around it.

2. Fry lightly in small amount of oil.

3. Drain on paper towels before adding to sauce.

Sauce:
1. Sauté onion. Add remaining ingredients, except cherries.

2. Simmer for one hour. Remove from fire. Strain, discard onions.

3. Add fried meatballs. Cook for another hour. To serve, just before warming add cherries.
